Meet Hallie Mant ∙ Wedding & Events Co-ordinator at Stratton House Hotel & Spa
As Hallie Mant marks the end of her first year as Wedding & Events Co-ordinator at Stratton House, we caught up with her to talk about weddings, creativity, changing trends and what makes this Cotswold wedding venue such a special place to say “I do”.
From launching her own catering business to helping couples plan deeply personal celebrations, Hallie’s path into weddings has been anything but ordinary. But as she explains, every step has shaped the way she works with couples today.
Hallie, can you tell us a little bit about your background?
My career actually began in my own kitchen. I launched a small business and what started as one order soon became ten. Before long, my hobby had grown into a thriving wedding catering business.
Through building that brand, I discovered how much I loved the creative side of marketing, which led me to pursue a marketing apprenticeship. Over time, though, I realised it wasn’t just marketing I was passionate about. I loved creating experiences for people.
That’s what brought me here. Although I hadn’t officially been a Wedding & Events Co-ordinator before joining Stratton House, every part of my journey has helped shape me into someone who thrives on creativity, fast-paced environments and of course, love.

You’ve now completed your first year at Stratton House. What has that first year been like?
It has been a wonderful year and a really exciting one.
When I first joined Stratton House, I spent time getting to know the hotel properly. I wanted to understand who we are, where we want to be and the direction we’re heading in.
Every wedding at Stratton House is beautiful, but no two are ever the same. That was something I really wanted to reflect more clearly. Over the last few months, I’ve been working on refreshing our wedding approach so that it better showcases the versatility of the hotel and the individuality of the weddings we host.
That has included new wedding packages, a refreshed brochure and a customer journey designed to be seamless and as memorable as every wedding we hold.

What makes Stratton House Hotel special as a wedding venue?
For me, it’s the friendly and relaxed atmosphere.
Stratton House is a country house hotel and Cotswold wedding venue, but it also feels warm, welcoming and accessible. It has that lovely sense of occasion without feeling intimidating or overly formal.
We believe every wedding should be as unique as the love our couples share. Our approach is simple: what do you love, what feels like you, what is your vision and how can we bring that to life?
We can host intimate weddings for just two people, right through to celebrations of up to 120 guests. That flexibility means couples can shape the day around themselves rather than trying to squeeze their plans into a set formula.
Over the past year, I’ve seen what couples notice when they walk through the doors. It’s the setting and atmosphere, our amazing team and the feeling they get when they picture their wedding here.

The hotel has recently refreshed its wedding packages. What can couples expect?
The new packages have been created to give couples more choice and clarity while still leaving plenty of room for personality.
Some couples want something intimate and relaxed. Others want the full celebration with the ceremony, wedding breakfast, evening reception, dancing and overnight stays. Our packages are there to help guide couples through the process but allow for a lot of flexibility so they can create something unique to them.
The aim is to make the planning process feel easier, more enjoyable and more personal from the very beginning.
Have you noticed any wedding trends recently?
Definitely. Couples are becoming more creative and more confident about doing things their own way.
Some are choosing a “cupcake cut” instead of a traditional cake cut. Others are moving away from the classic three-course wedding breakfast and choosing something more personal or informal, like a basket meal inspired by their first date, afternoon tea or even a jacket potato feast!
We’re also seeing more couples, especially those celebrating a second wedding, choosing smaller and more intimate celebrations. But intimate doesn’t mean less special. These weddings often still have all the beautiful details, but the focus is very much on the nearest and dearest who have truly been part of the couple’s love story.
What do you enjoy most about working with couples?
I love seeing how different every couple is.
Some arrive with a very clear vision. Others know how they want the day to feel but need help shaping the details. My role is to listen, guide and help bring those ideas together in a way that feels achievable and true to them.
There’s something really special about seeing the day come to life after all those conversations, plans and little details. When a couple can relax and enjoy it because everything is running smoothly, that’s the best feeling.

Has there been a moment from your first year that really stands out?
On my second day at Stratton House, I coordinated one of our biggest weddings to date.
Nothing can fully prepare you for your first wedding as a co-ordinator, especially one of that size, but it was such a brilliant experience. I was very lucky that the couple were wonderful, and every couple I’ve worked with since has been fabulous and incredibly complimentary about their experience.
The real reason everything runs so smoothly is the team. We have amazing people here who are experts in the industry and they work so hard behind the scenes to make every wedding feel effortless for the couple and their guests.
What would you say to couples who are just starting to plan their wedding?
Start with what feels like you.
It’s very easy to get swept up in what a wedding “should” look like, but the most memorable weddings are the ones that feel personal. Think about the atmosphere you want, the people you want around you and the moments that matter most.

Finally, what’s next for weddings at Stratton House?
The next chapter is about continuing to build on everything we’ve refreshed this year.

It’s been a really exciting first year, and I’m looking forward to welcoming even more couples through the doors.
